Chilli Jam Recipe

It's been a bountiful autumn & I have become addicted to making chilli jam.
The 2nd batch of chilli jam this year was rated "9.5, with little room for improvement Sal" by a person who is neither a member of my family nor a close friend. 
I, hereby, declare chilli jam 2 recipe the BEST EVA . . . . til we try again next year anyways.

ps I have made a vegetarian version of this jam by replacing the fish sauce with a mixture of soy sauce & shaoxing which worked well.
oh ! btw I don't even like chilli & up until I started making this jam I never ate it
