Greek Salad #recipeforRuchita Dec 2017

​Seriously simple with just a few ingredients & flavour that is amazing.
Summer is defined by Greek salad or is Greek salad defined by summer ?
Either way, the best time to eat this is when tomatoes taste magnificent & that is summer !

I pretty much have a chop & layer method for this salad. I also tend to make this salad up just before dinner, eg while the meat is cooking on the BBQ, so it's super duper fresh & delicious.
I've used dried oregano in this recipe but you can always use it fresh from your garden if you have it. Somehow the dried oregano doesn't seem to compete with the fresh dill, whereas fresh oregano can be quite a dominant flavour.

​This is likely to be the last #recipeforRuchita & I feel it's fitting to end with the end of the year.
I may keep adding recipes to the blog . . . but then again I might not ! I haven't actually decided yet.
I quite like the seasonal aspect of the recipes as I think REAL seasonality is the foods we eat is vital & it's not as if I won't be cooking any more, trying new things & old for that matter, but it's time for a change as I have lost the sense of freedom & fun I used to have preparing these recipes for Ruchita. 
So here's to change & heres to 2018, onward & upward.
