Have fun with this one, don't be frightened of frying the tofu, likely it will stay together & if it doesn't who cares.
Once it's dressed & mixed with everything else it will taste great no matter what it looks like.
I also used organic tofu just to see how the texture & flavour worked & it was very good with none of that disgusting bitter aftertaste that can be present in some brands of tofu available in NZ.
