Rice, Tofu & Shiitake Shu Mai #recipeforRuchita December 2016

While we were in Christchurch for James & Ruchitas' wedding we went to 'Pot Sticker Dumplings' & it was amazing.
I think the 4 of us ate the entire menu actually. 

Ruchita doesn't really enjoy going out for dinner to non-vege places in New Zealand as she inevitably ends up eating something that feels to her like the kitchen has just thrown it together for 'The Vegetarian'.
That was certainly not the case here.
The vege options not only sounded amazing but they looked, smelt & tasted absolutely fantastic. 
Honestly, when her food was presented to her, the look on her face was unforgettable. 

I thought it'd be nice to have a dumpling recipe for this month's #recipeforRuchita.
So I gladly went down that rabbit hole & emerged the other side licking my fingers & with a very full tummy.

​I found several recipes for Korean dumplings with Kimchi & Tofu in them which I thought might be nice.
What I also discovered, which is VERY, VERY important is that the Kimchi that is available in shops here in New Plymouth IS NOT VEGETARIAN !
I found 3 brands which either have fish sauce or anchovies in it.

oh & as an aside, popular NZ food magazine, filling dumplings with such things as leek (out of season) & mozarella or wontons with feta makes treats not food . . . I digress but it really shits me that NZ chefs seem to think that vegetarian means replace the meat with eggs or cheese !

Anyway when I got over my rant ! I created this recipe for Ruchita & I'm damn sure it will put a smile on her face & that she will bite into it & the taste & texture will blow her mind - not just because it is really yummy but because she will have made it herself . . .

 . . . & that's what this journey is about

go, make, eat & enjoy xxx

the recipe
prepping the ingredients
making the dumplings
steaming the dumplings
making the filling
ingredients
dried shiitake
soaking shiitake in water
soaked, rehydrated & sliced
chopped
chopped water chestnuts
using the microplane to mince the garlic & ginger
finely chopped spring onions
all ingredients mixed together
making the dumplings
bought pastry thawed out
single dumpling wrapper
about a tablespoon of mixture
spread out to the edge
make a cross shape
squeeze & fold to pleat in the top
free your little dumpling onto the bench
to make a flat bottom so it will stand up
place them on baking paper in your steamer (no matter what steamer you use)
cooking & eating
ready to steam decorated with carrot to give them some colour ;)
