This is a fantastic way for using the last of the orange kumara for the season.
Roasting sweet & delicious kumara whole then combining them with black beans which have been warmed in a pan with cumin & toasted sesame seeds, served with a light tahini based dressing & any green you want.
The recipe from which I've adapted this, used avocado & sour cream mash as a side but that just seemed like a little too much soft, mushy food for my liking so I blanched some freshly podded broad beans & ate it all with seedy crunchy crackers.
I found this did satisfy the requirements of my body & brain to know it is sated - otherwise I tend to overeat !
This recipe is easy.
Just put the kumara into the oven & while they're roasting make the dressing & the black beans.
